Summer Chicken Tomato Basil Pockets. Eat Hard. SK.


Looking for a summer healthy bite? 
Try these easy Summer Chicken Tomato Basil Pockets.



Ingredients:
The Laughing Cow Light Cheese Wedge (Mozzarella Sun-Dried Tomato & Basil) x2
100% Whole Wheat Mini Pita Bread x8
Brussel Sprouts x4
Skinless Chicken Breast 3oz
Oregano 1tsp
Basil 1tsp
Salt

Makes 2 servings


Cut open the mini pita breads to form a pocket.


Shred the brussel sprouts
If you can get your hands on some brussel sprouts, any type of veggie would work 
(such as baby spinach, or arugula)


Over a non-stick frying pan, lightly sauté brussel sprout shreds with little to no oil   


Poach the chicken breast in simmering water until fork tender
(about 15-20 min)
Let cool and shred the chicken breast


In a bowl, mix together the wedges of cheese, oregano, basil, and salt to taste


Stuff the mixture in to each pita pocket
